Strawberries & Cream Oatmeal with Chopped Pistachios

This morning was the first time I have ever gotten really, really excited about oatmeal.  The plainness of it has always struck me as rather boring.  I usually top it with fresh fruit, nuts and a drizzle of maple syrup to jazz it up a bit, but today’s version took this breakfast staple to new heights. 

It’s strawberry season down here in Florida, so I used berries from our local farmer’s market.  The strawberries this year are sweeter and juicier than ever.  With a whole fridge full of them, I’m dubbing this week strawberry week.  I’ll be working on several new recipes featuring this beautiful seasonal ingredient.

What seasonal ingredients are your favorites?  Peaches and berries are top on my list.

Strawberries & Cream Oatmeal

1 cup cooked oatmeal (cooked to the consistency you like)

1 generous handful fresh sliced strawberries

A generous drizzle of French Vanilla creamer (I use soy creamer or coconut creamer)

A nice generous sprinkle of roasted and salted pistachios, roughly chopped

The amounts above are general approximations.  Feel free to adjust the ingredients listed to your tastes and preference.

Pour the hot oatmeal in a single serving bowl.  Top with fresh berries, French Vanilla creamer, and chopped pistachios.  Serve warm.

    Yumm! that looks fantastic! Cant wait to try it! Since I don’t have the soy creamer, I wonder how vanilla coconut milk would taste? Thoughts?

      Thanks :) The creamer is creamier than the milk. I used So Delicious brand vanilla creamer too. You could use regular vegan milk, but it wouldn’t be as creamy or sweet.
