Monday morning, I had the most wonderful and unexpected surprise. I was going through the drive through at Starbucks picking up drinks to surprise my colleagues. When I went to pay, the car in front of me had paid my entire bill! I am a huge fan of random acts of kindness. I do them all the time, but this was the first time anything like this has happened. I was so inspired, that I spent the rest of the day thinking of all the ways I could pay it forward. I made it my mission this week to do one random act of kindness each day. It’s amazing how things like that can make someone’s day, and how positive actions are contagious.
Today’s recipe makes a good amount, so you will have plenty to share. It is the fastest jam you will ever make, and insanely healthy too. I made it raw, so that it would retain all of the nutrients from the berries. If you prefer to use other berries, go for it. Just adjust the agave and lemon juice to your taste.
Chia Berry Jam
Yield: 3 8oz mason jars
2 cups fresh blueberries
2 cups fresh sliced strawberries
2 tablespoons chia seeds, ground into a fine powder in a spice grinder or coffee grinder
¼ cup agave nectar, or other sweetener of your choice
3 tablespoons lemon juice
Zest from 1 lemon
1 teaspoon vanilla extract
2 pinches of salt (don’t omit this, it magically enhances the sweetness)
- In a food processor, blend all of the ingredients until fairly smooth. If there are a few berry pieces, it is okay. They may taste firm, but they will soften as it sits. Adjust the lemon juice and agave to your taste, depending on how sweet or tart your berries are.
- Allow the chia to thicken the berry mixture and allow it to sit for 15-20 minutes. Pour into jars, and keep refrigerated.
- Serve on your favorite bread or use it in place of traditional jam. Be sure to share a jar with a friend too. Enjoy!
